Perochon.

An exceptional land, between ocean and rich lands

Vendée wines draw their specificity from the mild and humid climate that the Atlantic Ocean brings us. The clay-siliceous soils of Vendée form a major asset to our Vendée wine-growing region. As a kid, we remember our grandfathers who had a few vines in the bottom far of their garden that allowed them to enjoy wine all year round! During the harvest, as a kid, we couldn't wait to taste the first grape juice out of the press before there entering in the barrel. We have wine as a heritage and we want you to enjoy it in our restaurant, it is fortunate to be surrounded by quality vineyards to enhance our dishes.

Perfect pairings for an exceptional menu

The vines thrive on varied soils, between schist, granite and limestone, offering a diversity of exceptional flavors. These conditions make it possible to obtain fresh, fruity and balanced wines, ideal for accompanying refined gourmet cuisine.

1. Aperitif

To start off gently, appetizers based on seafood such as oysters or shrimp tartare can be accompanied by a Fiefs Vendéen Blanc from Chenin, or by a Chardonnay. The floral notes and the freshness in the mouth of these wines represent an ideal choice to open the meal.

2. Refined entry and mineral white

A scallop carpaccio or pan-fried foie gras will pair perfectly with a more complex white wine such as Chenin.

3. Main course: sublime meat and fish

Vendée red wine, made from Pinot Noir, Cabernet Franc or Gamay, are precious allies for flavorful dishes. A beef fillet with foie gras sauce will be enhanced by an ample and structured red wine ofFiefs Vendéens, while noble fish such as turbot will be combined with a hearty and balanced white wine.

4. Cheese and dessert

To end this gourmet dinner in style, there is nothing like a sweet white wine or a sparkling wine from Vendée. The famous Brem Trilogy, with its notes of citrus and honey, goes divinely well with aged goat cheese or a fruity dessert such as caramelized apple pie.
